Alfalfa is a rich source of vitamins, minerals and antioxidants. (A, C, E, K, calcium, potassium, phosphorus and iron.) These high levels give Alfalfa a wide range of uses. It is thought to reduce blood cholesterol levels and has documented hypoglycaemic action for some people with blood sugar control problems. Also used as an appetite stimulant and thought to help alleviate menopausal problems in older women.
